A Four Quarters Cake
Featuring Driftwood, Helford Blue, Colston Bassett Stilton, Fosse Way Fleece, and...
...our Classic Four Quarters: Cornish Yarg and Smart's Double Gloucester, plus Quicke's Oak Smoked and Mature Cheddars. Push the four pieces together to make a 10" wheel with almost 4kg of cheese.
As an optional extra, you can add a large 2.5-3kg brie. This would become the base of the cake and move it up from feeding about 70 people to more like 100.
Around 7.2kg of cheese, or 10.4kg with brie option included - feeds 70, or 100 with brie option included. Supplied as wrapped cheeses, undecorated. For our photo shoot, the cheese tower was decorated by the British Academy of Floral Art.

Four-tissimo!
Crowning this cake, which feeds about a hundred, is the unique-looking Driftwood, a soft goat's cheese with a mottled grey-and-white rind. Then come two contrasting blues - a mellow Cornish Blue and the rather stronger flavour of Colston Bassett Stilton (in the orange rind).
In the middle of the cake is something a little more unusual: Fosse Way Fleece - a beautiful ewe's milk cheese from Somerset that we have been including in wedding cakes for years.
Then we come to the level that provides the 'four' in this cake's name:
four quarter-shaped pieces are pushed together to make a whole wheel for the base of the cake. And they're four beautifully contrasting hard cow's cheeses: Quicke's Mature Cheddar and Oak Smoked Cheddar, plus Smart's Double Gloucester and Cornish Yarg.
The brie base is optional, but if included will be around 3kg and 33cm across. It may be Westcountry or French - depending on what's available and what we think is appropriate.
