We've always been light on cheeses made in Dorset, so here's a small step to set that straight. Dorset Red is made by Ford Farm - based on the Ashley Chase Estate near Dorchester, they are mainly cheddar makers, but there's also this. Dorset Red is lighter than cheddar with a velvety texture. The amber-coloured core is created by adding the vegetable dye annato (as in Westcombe Red or Double Devonshire). Plus it's a smoked cheese - so you get the usual gorgeous effect on flavour and a rich red-orange rind.
