The One That Packs A Punch
One day in Spring 2025 Tom and I had a chap in the shop looking for ‘something British, but like Parmesan’. We couldn’t help him.
But then Tom found this: Old Winchester, made by Mike Smales at Lyburn Cheese. It immediately started to wow people in the shop. We have nothing else like it.
It’s The One.
Old Winchester is made with a gouda-style recipe, but - aged to around 18 months - it becomes a thing all its own - a fantastically strong, nutty cheese which is hard, dry, dense and verging on granular or crystalline in texture. And in fact it is often used as a substitute for Parmesan, though it can equally claim a place on the cheeseboard in its own right.
Send it as a gift on its own, add extras of your choice, or choose from these suggestions which you can find in the ‘Add’ tab below:
Two contrasting cheeses: Duckett’s Caerphilly (young) and Blue Moon.
Two strong cheeses: Bovey Straight and Extra Mature Keen’s Cheddar.
Two poky pickles: Gooseberry & Coriander Chutney or Black Garlic Pickle.
Two robust crackers: Olina’s Flatbreads and Dorset Knobs.
