Question: is it a cheese wedding cake, or a wedding cheese cake, or a wedding cheesecake?
Who knows? But whatever it's called, we're dealing with an arrangement of cheeses stacked up to make a nicely tiered pyramid, then decorated with fruit, flowers, whatever takes your fancy. And they're getting very popular! In principle, there's no reason why you couldn’t do this yourself, but there are a couple of awkward bits to it. For one thing, you're trying to hit a certain target weight – in order to have the right amount of cheese for the number of guests. Plus … you normally want a contrasting selection of cheeses. Plus … you're trying to get the sizes right, so that the end result looks 'balanced'.
