Maurice
This exclusive soft cheese is made specially for us by the famous Devon dairy Sharpham using the milk of their Jersey cows. It's a super-creamy and very young 'fresh' cheese - probably just a week or two old when you eat it - with just enough geotrichum yeast to give it a wrinkled appearance. It should be firm enough to hold its shape but soft enough to spread.
Maurice is named after Maurice Ash, who created both vineyard and dairy at Sharpham in the 1970s. It is the un-flavoured version of Pepperdon etc, which you can see here.
