Dorset Red

We've always been light on cheeses made in Dorset, so here's a small step to set that straight. Dorset Red is made on by Ford Farm, based on the Ashley Chase Estate near Dorchester, and whilst they are mainly cheddar makers, there's also this. Dorset Red is lighter than cheddar with a velvety texture. The amber-coloured core is created by adding the vegetable dye annato (as in Westcombe Red or a Double Gloucester). Plus it's a smoked cheese - so you get the usual gorgeous effect on flavour and a rich red-orange rind.
