Two creamy white goats' cheeses at the top here: the dinky Capricorn and one of our great favourites, White Nancy. Then – as a real contrast - there's Exmoor Jersey Blue.
The base is 4kg of Quickes cheddar, and here there's a choice: oak-smoked or plain. Equally delicious, in my book! Just make your choice from the drop-down menu.
Nudging 6kg, this would suit 50-60.
