Pelagonia Spicy Green Tapenade
In this tapenade, finely chopped green olives are mixed with red and jalapeno peppers, oil and a little vinegar. Associated most often with Provence, olive spreads are also found in Italy, Greece and Crete - our version is from Pelagonia, the food producer based in Macedonia. A green olive tapenade like this is particularly good with goats' cheese.
