Pelagonia Black Olive Tapenade


In this tapenade, finely chopped black olives are mixed with herbs, oil and a little vinegar. Associated most often with Provence, olive spreads are also found in Italy, Greece and Crete - our version is from Pelagonia, the food producer based in Macedonia. A black olive tapenade like this is particularly good with goats' cheese.
