Chris Duckett's family had been making Caerphilly in Wedmore, Somerset, since the 1920s. When he gave up farming in the 90s production moved to the nearby Westcombe dairy, and it's been made there ever since.

Normally ready to eat in under a week, this version of Caerphilly is aged for 3-4 months.

Unpasteurised, vegetarian.
