Harvested by hand, with low yields from vineyard sites located at altitude, the famous Sicilian Nero d'Avola grapes are picked slightly early to ensure bright fresh wines with no jammy, baked flavours. The wines are naturally fermented in wooden barrels without the addition of yeast and then aged in neutral barrels for eight months. The wines are spicy and full flavoured with liquorice, chocolate and dark fruits.
