This small cake was led by colour. Wild Garlic Yarg, with its hand-applied covering of glossy green leaves, is one of the best-looking cheeses out there. So that’s the base. On top are three pure white cheeses, all on the soft-and-creamy side. Elmhirst is a triple cream-enriched brie style cheese from Devon’s wonderful Sharpham Partnership. It could be the last word in luxury! White Nancy is a luscious soft goats’ cheese with a very attractive wrinkled white rind, and another small goats’ cheese - Vulscombe - tops it all off.
Weighing in at around 3-3 or 3.4kg, this might suit, what, 30-35? Our cake was photographed by top Bovey lensman Bim and decorated by the wondrous Annie. Don’t forget that we only supply the cheese ... so you’ll need a creative person to take on the decorating duties.
