We regularly get asked for cakes to suit 30 or 40, and I thought it was about time a few cakes of a suitable size made their appearance in the Cheese Shed.
This one’s getting on for 3.8kg. The base is Menallack, from Cornwall. This is a tangy hard cheese which, whilst not technically a cheddar, will keep the cheddar-lovers happy. On top of that is a lovely hard goats‘ cheese from Woolsery, based in Dorset. Cornish Blue was voted Best English Cheese and Best Blue Cheese just a couple of years ago, so you can gather that it’s really very good.
On the top, we used to use Dorstone (pictured). Unfortunately we can't get this any more, so currently what I'm suggesting is a combination of two cheeses: Little Wallop and Gevrik. You can see these two on top of our Dartington cake.
Our cake was photographed by top Bovey lensman Bim and decorated by the wondrous Annie. Don’t forget that we only supply the cheese ... so you’ll need a creative person to take on the decorating duties.
Low-Goat Tintagel
Too much goat? This variant takes out the Woolsery Goat (2nd cheese up) and replaces it with ultra-luxurious Sharpham Elmhirst, a cream-enriched brie. So you get Menallack (cheddarish), Elmhirst (soft), Cornish Blue (yep - blue) and the two small ones (see above) on top. The quantity of cheese and price are the same.
