Any serious cheddar collection has to include the 'big three' Somerset makers, Montgomery's, Keen's and Westcombe Dairy. These are classic hand-made cheddars, long-matured in muslin cloth. The three makers have formed a 'Slow Food Presidia' dedicated to preserving ultra-traditional cheddar.
From Devon, Quicke's is also a traditional cheese and very highly regarded. We have their Vintage and Extra Mature cheddars, plus an Oak Smoked version. I've long been partial to Denhay cheddar from Dorset, and their boxed 2 kilo Dorset Drum is just the thing for a party or even a special gift. Finally there's a reminder that things don't have to be traditional to be good, with the red-waxed Godminster Vintage Organic Cheddar.
