Simon Weaver's Cotswold Organic Dairy is a new name in cheesemaking but one that is already receiving attention … his three versions of Brie have won two Taste of the West awards and a Gold at the 2006 World Cheese Awards in little over a year!
All the cheese is made from Simons own herd of Frisians. From our point of view, in the Cheese Shed, Simon's products give us several 'firsts': our first organic Brie, first blue Brie (Cotswold Blue), and first herby Brie (Cotswold Herb).
There are three sizes:
Cotswold Brie (a very small wheel): 250g
Cotswold Blue (square): 370g
Cotswold Herb (micro-truckle): 150g
