A cheddar-style hard goats cheese, Pennard Vale is made by Philip Rainbow at Somerset Cheese Company. Philip previously worked for Monastery Cheese (they make the ewes' milk Somerset Rambler) and seems to use any milk you can think of – apart from cows! Pennard Vale has a close, smooth, creamy texture with a nutty taste.
