This a goats' milk version of Caerphilly, from the same dairy that makes Fosseway Fleece (Duckett's version of which often features in our Somerset Selection). This cheese develops a good flavour within 4 weeks and so can be eaten young.
Pale cream in colour, it has a slightly open, chalky texture without being dry. A light, refreshing cheese!
