Named after one of my favourite spots - wonderful Lundy off the Devon coast - this beautifully balanced cake weighs in at 7.3kg and would suit a gathering of 70-80 people.
There's a Quicke's Mature Cheddar for the base, then a delicious wheel of Devon Blue. Ewes' milk cheeses are steadily gaining in popularity, so above that here's Tala, from Cornwall's Menallack Farm. A small Cornish Blue supports a little Vulscombe goats' cheese - this is the version wih peppercorns just to add a bit of interesting texture.
