Jersey Shield is a new-ish cheese from renowned Somerset cheddar maker Jamie Montgomery. In 2000, Jamie played host to two young Americans keen to learn about cheesemaking. They experimented with some of his Jersey milk - not generally used for cheddar - using various techniques, and the result of one of their more successful ideas led to Jersey Shield. Softer, springier than cheddar and with a buttery taste, the new cheese got off to a flying start with a Gold Medal at the 2001 World Cheese Awards.
