Terri Rasmussen worked with Sue Proudfoot at Whalesborough (Keltic Gold, Miss Muffet) before setting up on her own as Tamaracott Cheeses and producing her first cheese at the end of 2005. Based in North-East Cornwall, she decided to specialize in sheeps' milk cheeses with local milk from Boyton.
Hobbs Choice is a firm cheese with a natural moulded rind: eaten with this left on, Terri describes it as having a nutty taste which contrasts nicely with the sweetness of the milk. We're selling it in as a small whole cheese of between 400 and 450g.
This is exactly the sort of cheese that the Cheese Shed was set up to sell - its a really specialist handmade foodstuff made by a small producer. Terri sells to a couple of shops and at farmers markets. But this also means it's a bit more difficult for us to get, so ... do buy some Hobbs Choice - but allow a litttle longer for it to arrive!
NB Have just noticed that Hobbs Choice is on the menu at Jamie Oliver's Fifteen Cornwall restaurant, which has to be a pretty good recommendation!
