At the moment Terri is having to take a break from production due to a shortage of ewes' milk. If anyones knows of a farmer in the vicinity who can help, please let me know ...
Terri Rasmussen worked with Sue Proudfoot at Whalesborough (Keltic Gold, Miss Muffet) before setting up on her own as Tamaracott Cheeses and producing her first cheese at the end of 2005. Based in North-East Cornwall, she decided to specialize in sheeps' milk cheeses with local milk from Boyton (her other cheese is duly called Boyton - take a look).
Hobbs Choice is a firm cheese with a natural moulded rind: eaten with this left on, Terri describes it as having a nutty taste which contrasts nicely with the sweetness of the milk. We're selling it in as a small whole cheese of between 400 and 450g, or as cut pieces taken from a larger truckle of about 1.2kg.
This is exactly the sort of cheese that the Cheese Shed was set up to sell - its a really specialist handmade foodstuff made by a small producer.
