More great cheeses that I was introduced to at the Tavistock Real Cheese Fair. Daisy and Co (Richard and Caroline Harbord) produce a quartet of mould-ripened cheeses on their farm near Bruton in Somerset. They're all variations are variations on a theme, and all use the organic, pasteurised milk from the Harbord's own herd of Jersey cows.
Goldilocks (pictured bottom left) is the 'basic' version, like a stronger Brie, a bright golden yellow under the white exterior. It'll get stronger, softer and runnier the longer you keep it.
Black-Eyed Susan (main picture) is the same cheese, rolled in crushed black peppercorns. The crunchy texture and spicy taste of the peppercorns contrast wonderfully with the smoothness and creaminess of the cheese.
Indian Blanket (no, I don't know either … but the picture is the middle of the three) is a Goldilocks that has been smoked over untreated oak chips. As well as the smoky flavour, this leaves an attractive mottling on the cheese's previously white coat.
The latest is Viper's Grass (bottom right), flavoured with garlic and herbs.
Organic, pasteurised, vegetarian.
