One of the world's great cheeses, but so familiar - mainly in it's modern, factory-made form - that we sometimes forget to give it the respect it deserves.
So let's turn our attention to what we can fairly describe as the real thing. Somerset has a number of great makers, and we've chosen three for The Cheese Shed. These makers: Westcombe Dairy, Keens and Montgomerys are committed to a totally traditional method. Mary Quicke makes another celebrated cheddar on the Devon farm her family have farmed for 450 years: we offer Quicke's Extra Mature and - when available - the 24 month matured Vintage. Her superb Oak-Smoked version is here too. At the milder end of the spectrum, Dorset-based Denhay make a gorgeous 2kg cheese, the Dorset Drum.
That leaves Godminster, which is a more modern cheese in terms of its production, but it's a very good modern cheese which has deservedly found a lot of fans. Available in several sizes and in a heart-shaped version.
