Two creamy white goats' cheeses at the top here: the dinky Capricorn and one of our great favourites, White Nancy. Then – as a real contrast - there's Exmoor Jersey Blue.
The base is the very tasty Westcombe Red, an unpasteurised 'red Leicester' style cheese that's a world away from the usual bland offerings that come under that name.
The larger cakes usually have a cheddar – here, for a slight twist, we've used Quickes oak smoked cheddar. Equally, we could use 'plain', and you'll see both option choices listed in the drop-down menu above.
At around 10½ kilos, this might do for a gathering of 100-110.
